Ingredients:
15 depitted dates
1 scoop vanilla protein (Garden of Life)
1 Tbl matcha powder
2/3 cup pistachios
3/4 cup cashews
1/4 cup coconut, shredded
15 depitted dates
1/2 tsp pink sea salt
1 T coconut oil or 2 Tbl coconut milk
Topping:
1/4 cup coconut, shredded
2 Tbl pistachios, crushed
Directions:
1. Soak the dates in water for 20 minutes, then drain.
2. Add the pistachios into the blender and pulse until crushed about the same size as the shredded coconut. Measure 2 Tbl a bowl with the 1/4 cup shredded coconut for the topping.
2. Add the dates, protein, matcha powder, cashews, coconut, salt, coconut oil into the Vitamix blender. Pulse until combined.
3. Transfer to a small bowl.
4. Use a spoon to scoop about a tablespoon of the mixture into your hands and roll into a ball.
5. Roll into the Topping mixture.
6. Lay on a piece of parchment/wax/foil sheet.
7. Continue until all the mixture is gone.
8. Place 4-5 energy balls into a ziplock bag, ensure they do not touch one another.
9. Place in the freezer.
10. Enjoy by taking out of the freezer and letting it sit at room temperature or leaving in the fridge!
