Instant Pot Beef & Barley Soup

2 Tbl olive oil
1/2 lb stewing beef, cut into 1/2″ cubes
1 medium onion, diced
3 cloves garlic, minced
2 stalks celery, diced
1 6oz can tomato paste
1 qt chicken broth
1 tsp salt
1 tsp cumin
1 tsp paprika
1/2 tsp black pepper
1 8oz package mushrooms, sliced
1 sweet potato, cubed 1/2″
1/2 cup barley

1. Turn on the instant pot and press the Saute option.
2. Add the olive oil.
3. Sear the beef.
4. Add the onions, celery and garlic.
5. Saute until translucent, may add broth if needed.
6. Add the tomato paste, stir until it smells caramelized and looks a few shades darker, about 3 minutes.
7. Add broth, salt, cumin, paprika, black pepper, mushrooms, sweet potato.
8. Rinse the barley. Add to the instant pot.
9. Put the lid on and set the instant pot to Stew for 20 minutes.
