6 pounds chicken thighs/drumsticks about 6 of each -deskinned
2 Tablespoons Oil
¾ cup rice vinegar
¾ cup soy sauce
2 T oyster sauce (optional)
2 whole garlic – smashed and peeled
2 teaspoons whole peppercorns
2 inch long ginger
6-10 bay leaves
1 small cube rock sugar (2 Tbl brown sugar as a substitute)
- Heat the instant pot, add the oil, and saute the chicken pieces
- In a bowl, add all the other ingredients and stir.
- Pour the mixture into the instant pot.
- Cook on high pressure 30 min or slow cook for 6 hours
- Serve with rice
