Ingredients:
1 pound beef,
3 Tablespoons vegetable oil
3 cloves garlic, minced
1 onion, diced
1 bell pepper, diced
1 can-4oz ancho chili pepper
1 can tomato paste
3 Tbl chili powder
2 Tbl paprika
2 Tbl oregano
2 Tbl cocoa powder
1 tsp cumin
5 cups stock
1 can- 12oz bean of your choice (black, kidney, cannellini)
Directions:
1. Sauce ground beef in a pan until cooked through. Drain.
2. In instant pot, on sauce setting, add olive oil and allow to heat.
3. Add the garlic, onion and cook until transparent, stirring to prevent burning.
4. Add the bell peppers, canned chili peppers, tomato paste, chili pepper, paprika, oregano, coco powder and cumin. Cook until fragrant about 2 minutes.
5. Add the stock, beans, beef.
6. Use chili setting on instant pot to cook.
