Creamy Mushroom Pasta

1 pound mushroom (variety such as portabella, button, shiitaki, oyster)
3 Tablespoon olive oil
1 shallot, diced
1/2 cup heavy cream
3 Tablespoon cilantro
2 Tablespoon butter
1/2 ounce Parmesan cheese
1 Tablespoon red chili flakes
1 Tablespoon lemon zest
1 Tablespoon lemon juice

1. Wash the mushrooms and cut into 1″ pieces.
2. Heat olive oil on a pan, add the shallots and saute.
3. Add the mushrooms. Cook until they sweat their liquid and then bring to simmer until the liquid is reduced to nearly nothing.
4. Meanwhile cook pasta of your choice according to the directions.
5. Save 1 cup of the pasta liquid.
6. Add the pasta, cream and pasta liquid until it reaches a consistency to your liking.
7. Remove from heat and add red chili flakes, lemon zest, lemon juice, butter, cilantro, Parmesan and black pepper to taste.
