¾ cup oats
¼ cup flaxseed,ground
¼ cup peanut butter
¼ cup pumpkin puree
2 Tablespoons maple syrup
½ teaspoon vanilla extract
¼ cup dark chocolate chips, mini (preferred)
- Put the oats and flaxseed into a vitamix and pulse so that the oats are broken down a bit.
- Pour into a medium bowl, add the peanut butter, pumpkin puree, maple syrup, vanilla extract and use a wooden spoon to incorporate.
- Add the chocolate chips.
- Use a mini ice cream scoop or a tablespoon to form small balls.
- Refrigerate and enjoy within 5 days.
