Ingredients:
2 Tablespoons butter
1 onion
3 Tablespoons garlic, minced
4 Tablespoons gochujang
3 cups broth
1 Tablespoon soy sauce
1 Tablespoon fish sauce
1 Tablespoon honey
Options:
4 cups total of : carrots, potatoes, butter beans, celery, sweet potatoes
1 bunch dinosaur kale/swiss chard or a sturdy leafy green
top with cilantro
Directions:
- Saute the onion in butter until softened and translucent.
- Add the garlic, saute for a minute then add gochujang and any sturdy vegetables being used.
- Add the broth, soy sauce, fish sauce and honey.
- Allow to simmer for 10-20 minutes covered. Check and stir every 5 minutes for doneness.
- Add the sturdy green and cook down until wilted, about 3-5 minutes.
- Serve with jasmine rice and top with cilantro.
